Now, coming back to your question, based on your screenshot, it looks like you're trying to get the embed code that's why your default email address is used. If you want to change your email address, you need to go to Send to Sign. Let me show you how:

1. In the Send tab of the Sign Document, click on Send to Sign on the left menu.
2. You can then update your Email address.
