AI assistant to only appear on certain web pages

can I select for the AI assistant to only appear on certain pages of my website that do not include the jotform store?

Unfortunately, it's not possible to make the AI Agent appear on specific pages. If you embed the AI Agent in your website, it will appear on all of your web pages. But you can create a Standalone AI Agent and embed it in different web pages separately. You can easily create an AI Agent from scratch. Let me show you how:

1. On your My Agents page, click on Create Agent in the top-left corner of the screen.
2. Next, select the Primary Channel you want for your AI Agent and click on Next. (I used Standalone in this example.)
3. On the Create an Agent page, click on Start From Scratch. 
4. Now, on the Describe the Agent page that opens, enter a description for the AI Agent you want to create or click on a button below it for a predefined one, and then click on Create.

This generates an AI Agent based on the description you entered and redirects you to AI Agent Builder to further customize it. You can check out this guide about How to Embed Your Agents to Other Platforms for more information.
