Hi team,
How do I ensure that when customers ask to talk to a human that they're moved to a que to talk with one of our staff?

Hi Nick,
Thanks for reaching out to Jotform Support. That's not possible, unfortunately. But, if you have a forum where customers can asked questions, and get answered by a real support, you can create an API endpoint, or reach out to your Development team, as you might have an existing API for that purpose.
You can take advantage the Send API Request action, to allow your AI Agent interact with external APIs. This action, allows your AI Agent to create tickets automatically based on a certain condition. You can check out this guide on How to create tickets with AI Agents automatically.

we're currently shopify based, using hubspot for our chat, with humans on
the other end - hoping to replace some of the initial customer service with
the chatbot from jotform - we've used a few different CRM's before

Hi Nick,
There are several platforms that offers that service, like Zendesk, JIRA, and many more. But I'm not entirely sure if they have existing APIs for this purpose, so creating a ticketing system could be a lot of work.
Another workaround you can go with, is to simply create a condition to generate a response that includes your email address, that they can email, whenever they request to talk to a real human. Let me walk you through on how to set it up:
1. In AI Agent Builder, in the blue navigation bar at the top, click on the Train tab.
2. In the menu on the left side of the page, click on Actions.
3. Then, click on the +Add new action button.
4. Finally, set up the condition to something like below:
